CRISP GOATS' CHEESE, HERB AND TOMATO SALAD
CRISP GOATS' CHEESE, HERB AND TOMATO SALAD

Ingredients
  • 150g/5½oz goats' cheese
  • sliced into four rounds
  • ½ onion
  • finely sliced
  • 1 tomato
  • chopped
  • 1 small handful fresh coriander
  • chopped
  • 2 tbsp olive oil
  • salt and freshly ground black pepper
Directions
  • Preheat the grill to its highest setting. When hot
  • place the cheese slices onto a baking tray and grill for 1-2 minutes on each side
  • or until golden-brown and crisp on both sides.
  • Mix the onion
  • tomato and coriander together in a bowl
  • drizzle over the olive oil and season with salt and freshly ground black pepper. Mix well to coat in the oil.
  • To serve
  • place the salad in the middle of a serving plate and arrange the crisp goats' cheese rounds on top.
