CRISP GOATS' CHEESE, HERB AND TOMATO SALAD
Ingredients
- 150g/5½oz goats' cheese
- sliced into four rounds
- ½ onion
- finely sliced
- 1 tomato
- chopped
- 1 small handful fresh coriander
- chopped
- 2 tbsp olive oil
- salt and freshly ground black pepper
Directions
- Preheat the grill to its highest setting. When hot
- place the cheese slices onto a baking tray and grill for 1-2 minutes on each side
- or until golden-brown and crisp on both sides.
- Mix the onion
- tomato and coriander together in a bowl
- drizzle over the olive oil and season with salt and freshly ground black pepper. Mix well to coat in the oil.
- To serve
- place the salad in the middle of a serving plate and arrange the crisp goats' cheese rounds on top.
