PRUNES WRAPPED IN PANCETTA WITH GOATS' CHEESE ON TOAST

Ingredients
  • 6 prunes
  • 3 pancetta rashers
  • cut in half
  • 1 tbsp olive oil
  • 2 slices toast
  • 3 slices goats' cheese
Directions
  • Wrap half a pancetta rasher around each prune
  • securing with a cocktail stick if necessary.
  • In a hot frying pan add the oil and the prunes wrapped in pancetta and cook for two minutes on each side
  • until pancetta is golden and cooked.
  • For the goats' cheese on toast
  • top each piece of toast with a slice of goats' cheese and place under a hot grill for two minutes.
  • To serve
  • place the goats' cheese on toast on a small plate
  • topped with the pancetta-wrapped prunes.
