PRUNES WRAPPED IN PANCETTA WITH GOATS' CHEESE ON TOAST
Ingredients
- 6 prunes
- 3 pancetta rashers
- cut in half
- 1 tbsp olive oil
- 2 slices toast
- 3 slices goats' cheese
Directions
- Wrap half a pancetta rasher around each prune
- securing with a cocktail stick if necessary.
- In a hot frying pan add the oil and the prunes wrapped in pancetta and cook for two minutes on each side
- until pancetta is golden and cooked.
- For the goats' cheese on toast
- top each piece of toast with a slice of goats' cheese and place under a hot grill for two minutes.
- To serve
- place the goats' cheese on toast on a small plate
- topped with the pancetta-wrapped prunes.
