WALNUT, PEAR AND GOATS' CHEESE SALAD
WALNUT, PEAR AND GOATS' CHEESE SALAD

Ingredients
  • 1 pear
  • peeled and chopped into 1cm/½in cubes
  • 55g/2oz walnuts
  • shells removed
  • roughly chopped
  • 55g/2oz goats' cheese
  • crumbled
  • handful fresh parsley
  • handful fresh coriander
  • handful fresh chervil
  • 2 tsp extra virgin olive oil
  • 1 tsp balsamic vinegar
  • squeeze lemon juice
  • salt and freshly ground black pepper
Directions
  • For the salad
  • place the pear pieces
  • walnuts
  • cheese and herbs into a large bowl and mix well.
  • For the dressing
  • place the oil
  • vinegar and lemon juice into a bowl. Season with salt and freshly ground black pepper and mix well.
  • To serve
  • pour the dressing over the salad and stir well to coat the salad ingredients. Place the salad onto a serving plate.
