WALNUT, PEAR AND GOATS' CHEESE SALAD
Ingredients
- 1 pear
- peeled and chopped into 1cm/½in cubes
- 55g/2oz walnuts
- shells removed
- roughly chopped
- 55g/2oz goats' cheese
- crumbled
- handful fresh parsley
- handful fresh coriander
- handful fresh chervil
- 2 tsp extra virgin olive oil
- 1 tsp balsamic vinegar
- squeeze lemon juice
- salt and freshly ground black pepper
Directions
- For the salad
- place the pear pieces
- walnuts
- cheese and herbs into a large bowl and mix well.
- For the dressing
- place the oil
- vinegar and lemon juice into a bowl. Season with salt and freshly ground black pepper and mix well.
- To serve
- pour the dressing over the salad and stir well to coat the salad ingredients. Place the salad onto a serving plate.
