BACON and CHEDDAR PANCAKES

Ingredients
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 large eggs
  • 2 cups buttermilk
  • ½ cup plain yogurt
  • ¼ cup unsalted butter (melted)
  • 2 cups mild cheddar cheese (grated)
  • 1 pound cooked bacon (crumbed)

  • In large bowl whisk together flour, cornmeal, sugar, salt and baking soda.
  • In another bowl, whisk together eggs, milk, yogurt and butter. Whisk into flour mixture just until combined.
  • Heat griddle over medium heat (350F). Preheat oven to 200F if you want to hold pancakes.
  • Pour ¼ cup of batter forming 4inch rounds and sprinkle 1 tablespoon of cheese and bacon onto each pancake. Cook until golden, 1-2 minutes on each side. Serve with cheese and syrup.
