BACON and CHEDDAR PANCAKES

Ingredients
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 large eggs
- 2 cups buttermilk
- ½ cup plain yogurt
- ¼ cup unsalted butter (melted)
- 2 cups mild cheddar cheese (grated)
- 1 pound cooked bacon (crumbed)

- In large bowl whisk together flour, cornmeal, sugar, salt and baking soda.
- In another bowl, whisk together eggs, milk, yogurt and butter. Whisk into flour mixture just until combined.
- Heat griddle over medium heat (350F). Preheat oven to 200F if you want to hold pancakes.
- Pour ¼ cup of batter forming 4inch rounds and sprinkle 1 tablespoon of cheese and bacon onto each pancake. Cook until golden, 1-2 minutes on each side. Serve with cheese and syrup.
