GRILLED MUSSELS with HOT FISH SAUCE

Ingredients
  • 1 teaspoon sugar
  • 2 dried hot red pepper
  • 2 cloves garlic
  • 2 tablespoon water

  • Clean and scrub the mussels as shown in class.
  • While mussels are draining, prepare sauce; Blend garlic and red peppers into paste.
  • Add juice of 1 lemon, 3 tablespoon fish sauce, 1 tablespoon sugar and finally 2 tablespoon water.
  • Preheat broiler.
  • Place clean and dry mussels in a single layer on a baking sheet.
  • Broil mussels just until they are all open and aromatic.
  • Remove from broiler and serve with rice. Dip mussels into sauce to eat.
