ASIAN NOODLE SALAD with CHILES and PEANUTS
ASIAN NOODLE SALAD with CHILES and PEANUTS

Ingredients
  • 2 tablespoon sugar
  • 1 ½ tablespoon balsamic vinegar or red wine vinegar
  • 1 cup cilantro (chopped)
  • 8 green onions (thinly sliced)
  • 3 jalapeno peppers (seeded and chopped)
  • 1 ½ cup dry roasted peanuts (lightly salted, chopped coarsely)

  • Cook noodles or spaghetti until just tender. Rinse with cold water until cool.
  • Drain well. Transfer to a large bowl.
  • Combine sesame oil, sesame oil, vinegar and salt in small bowl.
  • Stir to dissolve sugar. Add to noodles.
  • Add chopped cilantro, chiles and onions.
  • Mix well. Sprinkle peanuts over individual salads
