AMARETTI TIRAMISU

Ingredients
  • 200ml/7fl oz strong black coffee
  • ½ brandy miniature
  • 6 amaretti biscuits
  • 150ml/5fl oz double cream
  • whipped
  • 50g/1¾oz chocolate
  • grated
  • 50g/1¾oz tinned cherries
  • drained
  • stones removed
  • 1 tbsp cocoa powder
  • for dusting
  • 250ml/9fl oz milk
  • 75g/2¾oz dark chocolate
  • chopped
  • 2 tbsp icing sugar
  • ½ orange
  • peeled
  • sliced
Directions
  • Place the coffee and brandy into a bowl and mix together.
  • Dip the biscuits into the mixture
  • then place half of them into the base of a dessert glass.
  • Place the whipped cream into a bowl with the grated chocolate and cherries and stir to mix.
  • Spoon half of the cream mixture onto the biscuits
  • then repeat to make a second layer of biscuits followed by a final layer of cream. Dust with cocoa powder.
  • For the chocolate sauce
  • heat the milk in a saucepan
  • add the chocolate and simmer gently until the chocolate has melted. Stir in the icing sugar.
  • To serve
  • pour some of the chocolate sauce over the tiramisu and top with the orange slices.
