APPLE ONION SALAD WITH BLUE CHEESE DRESSING

Ingredients
- 1 tbsp olive oi
- l½ red onion
- diced
- 1 apple
- cored and sliced
- 25g/1oz Dolcelatte cheese
- 3 tbsp white wine vinegar
- 1 tbsp wholegrain mustard
- 50ml olive oil
Directions
- Heat the oil in a frying pan
- add the onion and cook for 3-4 minutes over a low heat until softened. Transfer to a bowl with the apple.
- In a separate bowl
- mix the blue cheese with the vinegar and the wholegrain mustard.
- Gradually add the oil
- whisking constantly. Pour the mix onto the apple and red onion and serve.
