APPLE, RAISIN AND COCONUT PORRIDGE WITH SPICED SUGAR

Ingredients
- 25g/1oz butter
- ½ Bramley apple
- peeled and chopped
- 2 tsp caster sugar
- 30g/1oz raisins
- 70g/2½oz porridge oats
- 200ml/7fl oz coconut milk
- 1 tbsp caster sugar
- 1 tbsp soft brown sugar
- ½ tsp mixed spice
- ½ tsp ground cinnamon
Directions
- For the porridge
- melt the butter in a saucepan
- add the apple and fry gently for three minutes. Add the caster sugar and cook for one minute.
- Add the raisins
- oats and coconut milk and simmer for five minutes
- stirring continuously. Add more coconut milk if the porridge is too thick. Spoon into a bowl.
- For the spiced sugar
- mix together the caster sugar
- soft brown sugar
- mixed spice and ground cinnamon until combined.
- To serve
- sprinkle the spiced sugar over the porridge.
