APPLE SNOW

Ingredients
- 6 apples
- thinly sliced
- 1 tsp cinnamon
- sugar to taste
- 120ml/4fl oz double cream
- 3 egg whites
Directions
- Place the apples
- cinnamon and a pinch of sugar into a pan and cook until the apples soften
- then pass through a sieve and allow to cool.
- Whip the cream into soft peaks and whisk the egg whites along with a little sugar until it forms stiff peaks. Fold in the cream and egg whites to the apple mixture and serve in a bowl.
