ASIAN-STYLE NOODLE SALAD

Ingredients
  • 85g/3oz udon noodles
  • cooked according to packet instructions and drained
  • ½ red pepper
  • seeds removed
  • chopped
  • 55g/2oz fresh pineapple flesh
  • chopped
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 2 tsp sesame oil
  • 2.5cm/1in piece root ginger
  • finely chopped
  • ½ tsp chilli flakes
Directions
  • Place the cooked noodles into a large bowl with the red pepper and pineapple.
  • In a small bowl
  • whisk together the olive oil
  • soy sauce
  • sesame oil
  • ginger and chilli flakes until well combined.
  • To serve
  • pour the dressing over the noodles and stir. Transfer to a serving bowl.
