ASIAN-STYLE NOODLE SALAD

Ingredients
- 85g/3oz udon noodles
- cooked according to packet instructions and drained
- ½ red pepper
- seeds removed
- chopped
- 55g/2oz fresh pineapple flesh
- chopped
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 2 tsp sesame oil
- 2.5cm/1in piece root ginger
- finely chopped
- ½ tsp chilli flakes
Directions
- Place the cooked noodles into a large bowl with the red pepper and pineapple.
- In a small bowl
- whisk together the olive oil
- soy sauce
- sesame oil
- ginger and chilli flakes until well combined.
- To serve
- pour the dressing over the noodles and stir. Transfer to a serving bowl.
