BAKED APPLE WITH RAISINS AND CUSTARD
BAKED APPLE WITH RAISINS AND CUSTARD

Ingredients
  • 1 tbsp soft brown sugar
  • 30g/1oz butter
  • 20g/¾oz raisins
  • honey
  • to drizzle
  • ½ apple
  • cored
  • 150ml/6fl oz milk
  • 150ml/6fl oz double cream
  • 40g/1½oz caster sugar
  • 1 tsp vanilla essence
  • 2 free-range egg yolks
Directions
  • Preheat the oven to 220C/425F/Gas 7.
  • Place the butter
  • raisins
  • brown sugar and honey into a bowl and mix together.
  • Place the apple onto a baking sheet and stuff with the butter mixture.
  • Cook in the oven for eight minutes.
  • For the custard
  • warm the milk and cream in a saucepan over a medium heat.
  • Place the sugar
  • vanilla and eggs into a bowl and thoroughly mix together. While stirring
  • gradually add the creama and milk the over a low heat. Stir constantly
  • until the custard slightly thickens.
  • To serve
  • place the apple on a serving plate and pour the hot custard around.
