BAKED APPLE WITH RAISINS AND CUSTARD

Ingredients
- 1 tbsp soft brown sugar
- 30g/1oz butter
- 20g/¾oz raisins
- honey
- to drizzle
- ½ apple
- cored
- 150ml/6fl oz milk
- 150ml/6fl oz double cream
- 40g/1½oz caster sugar
- 1 tsp vanilla essence
- 2 free-range egg yolks
Directions
- Preheat the oven to 220C/425F/Gas 7.
- Place the butter
- raisins
- brown sugar and honey into a bowl and mix together.
- Place the apple onto a baking sheet and stuff with the butter mixture.
- Cook in the oven for eight minutes.
- For the custard
- warm the milk and cream in a saucepan over a medium heat.
- Place the sugar
- vanilla and eggs into a bowl and thoroughly mix together. While stirring
- gradually add the creama and milk the over a low heat. Stir constantly
- until the custard slightly thickens.
- To serve
- place the apple on a serving plate and pour the hot custard around.
