BAKED MANGO WITH GINGER CHILLI SYRUP
BAKED MANGO WITH GINGER CHILLI SYRUP

Ingredients
  • ½ mango
  • skin on
  • 1 lime
  • juice only
  • 3 tbsp caster sugar
  • 1 red bird's eye chilli
  • chopped
  • 25g/1oz root ginger
  • chopped
Directions
  • Preheat the oven to 200C/400F/Gas 6.
  • Cut the mango in half. With a knife score a grid pattern into the mango
  • but not piercing through the skin. Turn the mango inside out to make a hedgehog shape. Place the mango onto a baking sheet and drizzle with the lime juice.
  • Place into the oven to bake for eight minutes.
  • Place the sugar
  • chilli and ginger into a small saucepan over a medium heat and cook until the sugar has dissolved and the sauce becomes sticky.
  • To serve
  • transfer the mango onto a serving plate and drizzle with the sticky chilli sauce.
