BAKED SCALLOPS

Ingredients
  • 2 scallops
  • cleaned
  • left in their shells
  • 25g/1oz butter
  • melted
  • ½ red chilli
  • chopped
  • 50g/1¾oz breadcrumbs
  • salt and freshly ground black pepper
  • handful watercress
Directions
  • Preheat the grill to its highest setting.
  • Place the scallops onto a baking sheet
  • top with the melted butter
  • chilli and breadcrumbs and season with salt and freshly ground black pepper.
  • Place the tray under the grill and cook for 3-4 minutes
  • or until golden-brown.
  • To serve
  • place the scallops onto a plate in their shells with the watercress placed alongside.
