BAKED SCALLOPS
Ingredients
- 2 scallops
- cleaned
- left in their shells
- 25g/1oz butter
- melted
- ½ red chilli
- chopped
- 50g/1¾oz breadcrumbs
- salt and freshly ground black pepper
- handful watercress
Directions
- Preheat the grill to its highest setting.
- Place the scallops onto a baking sheet
- top with the melted butter
- chilli and breadcrumbs and season with salt and freshly ground black pepper.
- Place the tray under the grill and cook for 3-4 minutes
- or until golden-brown.
- To serve
- place the scallops onto a plate in their shells with the watercress placed alongside.
