CARAMELISED ORANGES WITH AMARETTI AND CREAM
CARAMELISED ORANGES WITH AMARETTI AND CREAM

Ingredients
  • 30g/1oz butter
  • 2 tbsp brown sugar
  • 1 orange
  • peel and pith removed
  • sliced into rounds
  • ½ miniature bottle of brandy
  • 2 tbsp amaretti biscuits
  • crushed
  • 1 tbsp grated dark chocolate
  • fresh mint sprig
  • to garnish
  • double cream
  • to serve
Directions
  • Heat the butter and sugar together in a small frying pan until the sugar has dissolved.
  • Add the sliced oranges and cook for 2-3 minutes
  • until they are coated and caramelised.
  • Add the brandy and carefully allow to flame.
  • When the flames have died out
  • remove from the heat and arrange the orange slices around a shallow serving dish.
  • Pour the sauce from the frying pan over the oranges.
  • Sprinkle over the crushed biscuits
  • grated chocolate and garnish with a sprig of mint.
  • To serve
  • drizzle over some double cream.
