CHEESY REFRIED BARBECUE BEANS
Ingredients
- 1 tbsp olive oil
- 1 red chilli
- seeds removed and chopped finely
- 1 garlic clove
- crushed
- 1 tbsp brown sugar
- 2 tsp soy sauce
- 3 tbsp tomato sauce
- 150g/5½oz cannellini beans from a can
- rinsed and drained
- 1 ready-made flour tortilla
- 2 tbps grated Emmental cheese
Directions
- Preheat the grill to its highest setting.
- Heat the oil in a frying pan and add the chilli and garlic and fry for one minute.
- Add the brown sugar and cook for two minutes
- or until the sugar starts to melt.
- Add the soy sauce
- tomato sauce and cannellini beans. Bring to the boil
- then reduce the heat and simmer for four minutes.
- Place the tortilla into a clean ovenproof frying pan. Pour the beans mixture into the middle and fold the tortilla to cover.
- Top with the grated cheese and place under the grill. Cook for two minutes
- or until the cheese is melted and golden.
