CREAMED SPINACH WITH NUTMEG AND GARLIC
CREAMED SPINACH WITH NUTMEG AND GARLIC

Ingredients
  • 1 tbsp olive oil
  • 1 garlic clove
  • peeled
  • 125g spinach
  • washed
  • 200ml/7¼fl oz double cream
  • ground nutmeg
  • to taste
  • salt and freshly ground black pepper
Directions
  • Heat the olive oil in a frying pan over a medium heat and fry the garlic for 1-2 minutes. Add the spinach and continue to fry until the spinach has wilted. Pour in the cream and season
  • to taste
  • with nutmeg
  • salt and freshly ground black pepper.
  • Continue to heat for 2-3 minutes
  • or until the volume of the liquid has reduced slightly.
  • Blend the mixture together with a stick blender. Spoon into a bowl and garnish with extra grated nutmeg
  • to taste.
