CREAMED SPINACH WITH NUTMEG AND GARLIC
Ingredients
- 1 tbsp olive oil
- 1 garlic clove
- peeled
- 125g spinach
- washed
- 200ml/7¼fl oz double cream
- ground nutmeg
- to taste
- salt and freshly ground black pepper
Directions
- Heat the olive oil in a frying pan over a medium heat and fry the garlic for 1-2 minutes. Add the spinach and continue to fry until the spinach has wilted. Pour in the cream and season
- to taste
- with nutmeg
- salt and freshly ground black pepper.
- Continue to heat for 2-3 minutes
- or until the volume of the liquid has reduced slightly.
- Blend the mixture together with a stick blender. Spoon into a bowl and garnish with extra grated nutmeg
- to taste.
