DELUXE STEAK SANDWICH SERVED WITH STILTON SAUCE
Ingredients
- 225g/8oz sirloin steak
- 2 tbsp olive oil
- salt and freshly ground black pepper
- 2 slices bread
- ½ red onion
- sliced into rings
- 4 tbsp vegetable oil
- salt and freshly ground black pepper
- 5 tbsp white wine
- 75g/2¾oz Stilton cheese
- 2 tbsp double cream
Directions
- To make the steak sandwich
- rub one tablespoon olive oil onto the steak and season with salt and freshly ground black pepper.
- In a hot griddle pan
- cook the steak for 3-4 minutes.
- Rest the meat for two minutes and cut in half.
- Rub the remaining one tablespoon oil on to the bread
- and toast on the griddle pan.
- For the onion rings
- toss the onion slices with the oil and salt and freshly ground black pepper in a bowl.
- Place onto the griddle pan for 5-6 minutes till golden and soft.
- To make the Stilton sauce
- in a small saucepan add the wine and reduce until half. Add the cheese until melted and then finish off the sauce by adding the double cream.
- To serve
- make the sandwich by placing the steak onto the toasted bread. Pile with onions
- top with the other toasted bread and drizzle with Stilton.
