DELUXE STEAK SANDWICH SERVED WITH STILTON SAUCE
DELUXE STEAK SANDWICH SERVED WITH STILTON SAUCE

Ingredients
  • 225g/8oz sirloin steak
  • 2 tbsp olive oil
  • salt and freshly ground black pepper
  • 2 slices bread
  • ½ red onion
  • sliced into rings
  • 4 tbsp vegetable oil
  • salt and freshly ground black pepper
  • 5 tbsp white wine
  • 75g/2¾oz Stilton cheese
  • 2 tbsp double cream
Directions
  • To make the steak sandwich
  • rub one tablespoon olive oil onto the steak and season with salt and freshly ground black pepper.
  • In a hot griddle pan
  • cook the steak for 3-4 minutes.
  • Rest the meat for two minutes and cut in half.
  • Rub the remaining one tablespoon oil on to the bread
  • and toast on the griddle pan.
  • For the onion rings
  • toss the onion slices with the oil and salt and freshly ground black pepper in a bowl.
  • Place onto the griddle pan for 5-6 minutes till golden and soft.
  • To make the Stilton sauce
  • in a small saucepan add the wine and reduce until half. Add the cheese until melted and then finish off the sauce by adding the double cream.
  • To serve
  • make the sandwich by placing the steak onto the toasted bread. Pile with onions
  • top with the other toasted bread and drizzle with Stilton.
