EGG FRIED HAM AND STUFFED MUSHROOMS
EGG FRIED HAM AND STUFFED MUSHROOMS

Ingredients
  • 1 egg
  • lightly beaten
  • 55g/2oz plain flour
  • a little milk to taste
  • 2 slices ham
  • 1cm/0.5in thick
  • 2-3 tbsp olive oil
  • 2 large mushrooms
  • 2-3 tbsp parmesan
  • grated
  • 1 tbsp honey
  • handful of rocket
  • salt and freshly ground black pepper
Directions
  • Make a batter by beating the egg with the flour. Add a little milk if it is too thick.
  • Dip the ham in the batter.
  • Pan-fry the ham in the oil for one to two minutes either side until crisp.
  • Remove the stems from the mushrooms.
  • Stuff the mushrooms with the parmesan and drizzle with honey.
  • Bake in a hot oven for five to six minutes.
  • Season and serve the mushroom and ham on a bed of rocket.
