FRESHLY-SALTED CUCUMBERS

Ingredients
  • 3 garlic cloves
  • 2 tbsp horseradish
  • 2 horseradish leaves
  • 10 small pickling cucumbers
  • washed
  • 2 tbsp salt
Directions
  • Put the garlic
  • horseradish and horseradish leaves in the bottom of a large sterilised jar and add the cucumbers.
  • Add the salt to 2 litres/3½ pints water and mix thoroughly. Pour the salted water over the cucumbers
  • screw on the lid and leave to rest for 24 hours.
  • The cucumbers will keep in the fridge for one month.
