GREEK SALAD WITH FRIED FETA CHEESE
GREEK SALAD WITH FRIED FETA CHEESE

Ingredients
  • 1 roasted red pepper from a jar
  • sliced
  • ¼ cucumber
  • sliced
  • 1 clove garlic
  • thinly sliced
  • handful chickpeas from a can
  • rinsed and drained
  • 1 tbsp olive oil
  • handful olives
  • pitted
  • ½ lemon
  • juice only
  • sea salt and freshly ground black pepper
  • 25g/1oz flour
  • 2 tsp sesame seeds
  • 1 free-range egg
  • 110g/4oz feta cheese
  • sliced into 2 pieces
  • 4 tbsp olive oil
  • to fry
  • squeeze of lemon juice
Directions
  • To make the salad
  • mix together all of the ingredients
  • season to taste with salt and freshly ground black pepper and set aside.
  • For the fried feta mix together the flour
  • sesame seeds and egg in a bowl. Dip the feta pieces into the mixture to coat.
  • Heat the oil in a deep frying pan and add the feta. Fry for two to three minutes
  • turning once
  • until golden on both sides. Remove and drain on kitchen paper.
  • Place the fried feta on top of the salad with a squeeze of lemon juice and serve.
