GREEK SALAD WITH FRIED FETA CHEESE
Ingredients
- 1 roasted red pepper from a jar
- sliced
- ¼ cucumber
- sliced
- 1 clove garlic
- thinly sliced
- handful chickpeas from a can
- rinsed and drained
- 1 tbsp olive oil
- handful olives
- pitted
- ½ lemon
- juice only
- sea salt and freshly ground black pepper
- 25g/1oz flour
- 2 tsp sesame seeds
- 1 free-range egg
- 110g/4oz feta cheese
- sliced into 2 pieces
- 4 tbsp olive oil
- to fry
- squeeze of lemon juice
Directions
- To make the salad
- mix together all of the ingredients
- season to taste with salt and freshly ground black pepper and set aside.
- For the fried feta mix together the flour
- sesame seeds and egg in a bowl. Dip the feta pieces into the mixture to coat.
- Heat the oil in a deep frying pan and add the feta. Fry for two to three minutes
- turning once
- until golden on both sides. Remove and drain on kitchen paper.
- Place the fried feta on top of the salad with a squeeze of lemon juice and serve.
