LEAN PORK STIR FRY
Ingredients
- 110g/4oz medium ready-made egg noodles
- 250g/10½oz lean pork
- cut into cubes
- 1 tbsp olive oil
- 1 red onion
- peeled and sliced
- ½ green pepper
- core and seeds removed
- sliced
- 2 garlic cloves
- peeled and crushed
- ½ mango
- peeled
- stone removed and chopped
- 1 tsp freshly grated ginger
- squeeze lime juice
- splash water
- 1 tsp soy sauce
- 1 vegetable stock cube
- 1 tsp sesame oil
- salt and freshly ground black pepper
Directions
- Preheat the grill to its highest setting.
- Cook the egg noodles according to packet instructions and drain.
- Place the pork pieces onto a baking sheet and place under a heated grill. Grill for about 10 minutes
- turning occasionally to brown all over
- until cooked through.
- Heat the olive oil in a wok over a high heat. Add the onion and stir-fry for a few minutes to soften.
- Add the green pepper
- garlic
- mango and ginger to the wok and stir-fry for a few minutes.
- Add the lime juice
- splash of water and soy sauce. Stir well and crumble in the stock cube. 7. Add the sesame oil and salt and freshly ground black pepper and continue to heat for a few minutes.
- Add the cooked noodles to the pan and cook for 1-2 minutes
- or until heated through.
- Add the cooked pork pieces to the pan
- stir again
- then transfer the noodles to a large bowl and serve hot.
