EASY PEA AND MINT SOUP

Ingredients
  • 1 tbsp olive oil
  • ½ red onion
  • peeled and diced
  • 2 garlic cloves
  • peeled and crushed
  • ½ pt vegetable stock
  • handful fresh mint
  • handful fresh peas
  • drizzle cream
  • salt and freshly ground black pepper
Directions
  • Heat the oil in a saucepan and sauté the onion and garlic for 2-3 minutes
  • to soften.
  • Pour in the stock and bring to the boil. Add the mint and peas. Reduce the heat and simmer gently for 8-10 minutes.
  • Transfer the mixture to a liquidiser and blend until smooth.
  • Return to the pan to warm through and add the cream
  • salt and freshly ground black pepper.
  • Ladle into soup bowls to serve.
