Ingredients
  • 300ml/10½fl oz hot chicken stock
  • 1 tsp soy sauce
  • 1 spring onion
  • finely chopped
  • pinch dried chilli flakes
  • ½ carrot
  • finely chopped
  • 3 uncooked tiger prawns
  • peeled
  • salt and freshly ground black pepper
  • 1 tsp sesame oil
Directions
  • Bring the chicken stock to a simmer in a medium saucepan.
  • Add the soy sauce
  • spring onions
  • chilli flakes and carrot and simmer for five minutes.
  • Add the prawns and simmer for a further five minutes
  • then season
  • to taste
  • with salt and freshly ground black pepper.
  • To serve
  • pour the broth into a bowl and drizzle over the sesame oil.
