RICE NOODLE SALAD
Ingredients
- 100g/3½oz rice noodles
- 1 tbsp olive oil
- salt and freshly ground black pepper
- 1 tsp soy sauce
- 1 tsp sesame oil
- ½ lime
- juice only
- ½ fresh chilli
- finely chopped
- 1 tsp chopped coriander
- 1 tsp chopped chives
- 1 carrot
- peeled and sliced into ribbons with a vegetable peeler
Directions
- Place the rice noodles in a large bowl and cover with boiling water. Leave for 5 minutes to cook
- then drain the noodles and toss with the olive oil. Season with salt and freshly ground black pepper.
- In a large bowl whisk together the soy sauce
- sesame oil
- lime juice and chilli. Add the noodles
- coriander
- chives
- and carrot. Toss together and season with salt and freshly ground black pepper. Serve.
