RICE NOODLE SALAD
RICE NOODLE SALAD

Ingredients
  • 100g/3½oz rice noodles
  • 1 tbsp olive oil
  • salt and freshly ground black pepper
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • ½ lime
  • juice only
  • ½ fresh chilli
  • finely chopped
  • 1 tsp chopped coriander
  • 1 tsp chopped chives
  • 1 carrot
  • peeled and sliced into ribbons with a vegetable peeler
Directions
  • Place the rice noodles in a large bowl and cover with boiling water. Leave for 5 minutes to cook
  • then drain the noodles and toss with the olive oil. Season with salt and freshly ground black pepper.
  • In a large bowl whisk together the soy sauce
  • sesame oil
  • lime juice and chilli. Add the noodles
  • coriander
  • chives
  • and carrot. Toss together and season with salt and freshly ground black pepper. Serve.
