SHIITAKE BROTH

Ingredients
  • 300ml/½ pint chicken stock (vegetarians may substitute with vegetable stock)
  • ½ tsp chilli
  • chopped
  • ½ tbsp lemongrass
  • finely chopped
  • 100g/3½oz shiitake mushrooms
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • handful fresh coriander
  • chopped
Directions
  • Bring the chicken or vegetable stock to the boil and turn down to a gentle simmer.
  • Add the chilli
  • lemongrass
  • shiitake mushrooms
  • soy sauce and sesame oil. Simmer for five minutes
  • or until the mushrooms are tender.
  • Serve in a bowl topped with the coriander.
