SHIITAKE BROTH
Ingredients
- 300ml/½ pint chicken stock (vegetarians may substitute with vegetable stock)
- ½ tsp chilli
- chopped
- ½ tbsp lemongrass
- finely chopped
- 100g/3½oz shiitake mushrooms
- 1 tbsp soy sauce
- 1 tsp sesame oil
- handful fresh coriander
- chopped
Directions
- Bring the chicken or vegetable stock to the boil and turn down to a gentle simmer.
- Add the chilli
- lemongrass
- shiitake mushrooms
- soy sauce and sesame oil. Simmer for five minutes
- or until the mushrooms are tender.
- Serve in a bowl topped with the coriander.
