SPICED MANGO HEDGEHOG
Ingredients
- ½ mango
- cut off the stone in one piece
- pinch dried chilli flakes
- 1 tsp light brown sugar
- ½ lime
- juice only
Directions
- Preheat the oven to 200C/400F/Gas 6.
- Score the mango flesh in a criss-cross pattern down to the skin. Push up against the skin to invert the mango so that the flesh sticks out in cubes like a hedgehog.
- Place the mango 'hedgehog' onto a baking tray and scatter over the remaining ingredients.
- Bake the mango on the baking tray in the preheated oven for 4-5 minutes and serve immediately.
