STRAWBERRY MERINGUE ICE CREAM
STRAWBERRY MERINGUE ICE CREAM

Ingredients
  • 125ml/4fl oz double cream
  • 2 tbsp natural yoghurt
  • 4 tsp icing sugar
  • 4 large strawberries
  • mashed
  • 1 ready-made meringue nest
Directions
  • Whisk the cream in the bowl until soft peaks form when the whisk is removed.
  • Whisk in the yoghurt and icing sugar. Stir in the strawberries.
  • Crush the meringue into the bowl and stir together gently.
  • Transfer the mixture to a freezerproof container and freeze for at least two hours.
  • Allow to soften slightly before serving.
