SWEET AND SOUR PORK SERVED ON CHARD LEAVES
Ingredients
- 2 tbsp olive oil
- 100g/3½oz diced pork
- 3 prunes
- chopped
- 2 baby leeks
- chopped
- 1 tsp Tabasco sauce
- 2 tbsp tomato sauce
- 2 tbsp soy sauce
- 2 tbsp honey
- 3 orange segments
- 1 tbsp fresh coriander
- chopped
- 5 raw chard leaves
Directions
- Heat the oil in a large frying pan. Add the pork and fry for three minutes on each side
- until browned.
- Add the prunes
- leek
- Tabasco sauce
- tomato sauce and soy sauce and cook for a further five minutes.
- Add the honey
- orange segments and coriander and cook for a further two minutes.
- To serve
- lay the chard leaves flat on the plate and top with the sweet and sour pork.
