SWEET AND SOUR PORK SERVED ON CHARD LEAVES
SWEET AND SOUR PORK SERVED ON CHARD LEAVES

Ingredients
  • 2 tbsp olive oil
  • 100g/3½oz diced pork
  • 3 prunes
  • chopped
  • 2 baby leeks
  • chopped
  • 1 tsp Tabasco sauce
  • 2 tbsp tomato sauce
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 3 orange segments
  • 1 tbsp fresh coriander
  • chopped
  • 5 raw chard leaves
Directions
  • Heat the oil in a large frying pan. Add the pork and fry for three minutes on each side
  • until browned.
  • Add the prunes
  • leek
  • Tabasco sauce
  • tomato sauce and soy sauce and cook for a further five minutes.
  • Add the honey
  • orange segments and coriander and cook for a further two minutes.
  • To serve
  • lay the chard leaves flat on the plate and top with the sweet and sour pork.
