THAI-STYLE NOODLE SALAD

Ingredients
  • 1 tbsp olive oil
  • 1 red chilli
  • chopped
  • 1 garlic clove
  • chopped
  • 2.5cm/1in piece root ginger
  • peeled and grated
  • 3 small bulbs pak choi
  • leaves separated
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • ½ lime
  • juice only
  • 150g/5½oz dried egg noodles
  • cooked according to packet instructions
  • lime wedges
  • to garnish
Directions
  • Heat the oil in a wok or large frying pan
  • add the chilli
  • garlic and ginger and stir fry for one minute.
  • Add the pak choi and stir fry for 1-2 minutes
  • or until beginning to wilt.
  • Add the soy sauce
  • sesame oil and lime juice and simmer for 1-2 minutes.
  • Add the cooked noodles and stir well.
  • To serve
  • place the salad into a serving bowl and garnish with lime wedges.
