THAI-STYLE NOODLE SALAD
Ingredients
- 1 tbsp olive oil
- 1 red chilli
- chopped
- 1 garlic clove
- chopped
- 2.5cm/1in piece root ginger
- peeled and grated
- 3 small bulbs pak choi
- leaves separated
- 2 tbsp soy sauce
- 2 tsp sesame oil
- ½ lime
- juice only
- 150g/5½oz dried egg noodles
- cooked according to packet instructions
- lime wedges
- to garnish
Directions
- Heat the oil in a wok or large frying pan
- add the chilli
- garlic and ginger and stir fry for one minute.
- Add the pak choi and stir fry for 1-2 minutes
- or until beginning to wilt.
- Add the soy sauce
- sesame oil and lime juice and simmer for 1-2 minutes.
- Add the cooked noodles and stir well.
- To serve
- place the salad into a serving bowl and garnish with lime wedges.
