VEAL ESCALOPES WITH ONION CHUTNEY
VEAL ESCALOPES WITH ONION CHUTNEY

Ingredients
  • 100g/3¾oz veal escalope
  • 75g/2¾oz breadcrumbs
  • 1 tbsp olive oil
  • 25g/1oz mozzarella
  • sliced
  • 1 tbsp olive oil
  • ½ onion
  • chopped
  • 1 clove garlic
  • chopped
  • 3 tbsp red wine vinegar
  • 4 tbsp brown sugar
Directions
  • Preheat the grill to high.
  • Coat the veal in the breadcrumbs. Heat the olive oil in an ovenproof frying pan and fry the veal until golden on both sides.
  • Place the slices of mozzarella on top of the veal and transfer to the grill for three minutes or until the cheese has melted.
  • For the chutney
  • heat the olive oil in a small saucepan. Add onion and garlic and fry until golden.
  • Add the vinegar and brown sugar and simmer for 5-6 minutes.
  • Serve the chutney on top of the veal.
