VEGETABLE STIR-FRY WITH CHILLI AND GARLIC PORK
VEGETABLE STIR-FRY WITH CHILLI AND GARLIC PORK

Ingredients
  • 150g/5½oz pork fillet
  • sliced
  • pinch chilli flakes
  • dash olive oil
  • salt and freshly ground black pepper
  • 2 garlic cloves
  • chopped
  • ½ onion
  • finely sliced
  • 1 carrot
  • very finely sliced
  • 2 small leeks
  • very finely sliced
Directions
  • Place the sliced pork into a bowl with the chilli flakes
  • a dash of olive oil
  • salt and freshly ground black pepper and garlic. Stir well and leave to marinate for ten minutes.
  • Heat a wok
  • add a dash of olive oil and stir fry the pork for 2-3 minutes
  • then remove to a plate.
  • Add a little more olive oil to the wok and return to the heat. Add the onion
  • carrot and leeks and stir fry for three minutes. Return the pork to the wok and stir well.
  • To serve
  • pile the stir-fry into a serving bowl.
