VEGETABLE STIR-FRY WITH CHILLI AND GARLIC PORK
Ingredients
- 150g/5½oz pork fillet
- sliced
- pinch chilli flakes
- dash olive oil
- salt and freshly ground black pepper
- 2 garlic cloves
- chopped
- ½ onion
- finely sliced
- 1 carrot
- very finely sliced
- 2 small leeks
- very finely sliced
Directions
- Place the sliced pork into a bowl with the chilli flakes
- a dash of olive oil
- salt and freshly ground black pepper and garlic. Stir well and leave to marinate for ten minutes.
- Heat a wok
- add a dash of olive oil and stir fry the pork for 2-3 minutes
- then remove to a plate.
- Add a little more olive oil to the wok and return to the heat. Add the onion
- carrot and leeks and stir fry for three minutes. Return the pork to the wok and stir well.
- To serve
- pile the stir-fry into a serving bowl.
