ALMOND GELATIN SQUARES in FRUIT

Ingredients
- ¾ cup nonfat dry milk
- ½ cup sugar
- 1 teaspoon almond extract
- ¼ teaspoon ground cinnamon
- 1 pear, peeled, cored, cubed
- 1 cup seedless red grapes
- 2 kiwi fruits, peeled and sliced
- 1 orange, peeled, sectioned
- 1 1/3 cups pineapple chunks
- ¼ cup orange juice

- In a small saucepan, combine the gelatin and cold water. Add the boiling water and stir until the gelatin is completely dissolved. Place over medium heat and bring to a boil, stirring constantly.
- Gradually whisk in the dry milk and sugar and return to a boil. Stir in the almond extract and cinnamon. When the cinnamon is dissolved, pour the mixture into an 8 inch square pan.
- Cover and refrigerate until firm, about 1 hour. In a large bowl combine the pear, grapes, kiwi fruits, orange, pineapple and orange juice. Gently toss to mix well.
- To serve, cut the gelatin inti 1 inch squares, add to the fruit and toss gently. Divide among 4 individual bowls.
