MIDDLE EASTERN KEBABS

Ingredients
- 1 tablespoon lemon juice (fresh or bottled)
- 1 tablespoon freshly chopped flat-leaf parsley
- 1 teaspoon freshly chopped mint
- ½ teaspoon ground cumin
- 1 pint cayenne pepper
- 650g healthy eating lamb mince

- Preheat the grill or barbecue. Put all the ingredients except the lamb into a bowl and mix together. Add the lamb and mix well using your hands.
- Shape the mixture into eight sausages. Thread them onto skewers. Cook under the grill for about 10-12 minutes, turning over from time to time. Serve with pitta bread, salad and yogurt.
