BREADED PLAICE WITH HERBED RICE SALAD
BREADED PLAICE WITH HERBED RICE SALAD

Ingredients
  • 2 plaice fillets
  • 30g/1oz plain flour
  • 1 egg
  • beaten
  • 30g/1oz white breadcrumbs
  • 1-2 tbsp olive oil
  • 110g/4oz basmati rice
  • cooked
  • ½ red pepper
  • diced
  • 1 orange
  • juice only
  • 3 tbsp parsley
  • chopped
  • 3 tbsp coriander
  • chopped
Directions
  • Coat the plaice fillets in flour
  • then in the beaten egg and finally in the breadcrumbs.
  • Heat the oil in a non-stick frying pan and fry the fillets for 2-3 minutes on each side
  • until golden brown.
  • For the salad
  • mix the rice
  • pepper
  • orange juice and fresh herbs into a large bowl.
  • Spoon the rice onto a serving plate and serve the breaded fillets alongside.
