BREADED PLAICE WITH HERBED RICE SALAD
Ingredients
- 2 plaice fillets
- 30g/1oz plain flour
- 1 egg
- beaten
- 30g/1oz white breadcrumbs
- 1-2 tbsp olive oil
- 110g/4oz basmati rice
- cooked
- ½ red pepper
- diced
- 1 orange
- juice only
- 3 tbsp parsley
- chopped
- 3 tbsp coriander
- chopped
Directions
- Coat the plaice fillets in flour
- then in the beaten egg and finally in the breadcrumbs.
- Heat the oil in a non-stick frying pan and fry the fillets for 2-3 minutes on each side
- until golden brown.
- For the salad
- mix the rice
- pepper
- orange juice and fresh herbs into a large bowl.
- Spoon the rice onto a serving plate and serve the breaded fillets alongside.
