BRUSSELS SPROUTS WITH TOASTED ALMONDS AND BACON
Ingredients
- 4 slices smoked or unsmoked streaky bacon
- roughly chopped
- 1 banana shallot
- thinly sliced
- 2 garlic cloves
- crushed
- 250g/9oz Brussels sprouts
- finely shredded
- 30g/1oz toasted almonds
- roughly chopped
Directions
- Heat a frying pan over medium heat and fry the bacon until crisp. Transfer to a plate lined with kitchen paper to drain.
- Add the shallot and garlic to the pan and cook for 2 minutes
- until soft. Add the sprouts and cook for 3-4 minutes
- until wilted
- stirring occasionally.
- Return the bacon to the pan
- add the almonds and cook through for 2 minutes. Serve immediately.
