BRUSSELS SPROUTS WITH TOASTED ALMONDS AND BACON
BRUSSELS SPROUTS WITH TOASTED ALMONDS AND BACON

Ingredients
  • 4 slices smoked or unsmoked streaky bacon
  • roughly chopped
  • 1 banana shallot
  • thinly sliced
  • 2 garlic cloves
  • crushed
  • 250g/9oz Brussels sprouts
  • finely shredded
  • 30g/1oz toasted almonds
  • roughly chopped
Directions
  • Heat a frying pan over medium heat and fry the bacon until crisp. Transfer to a plate lined with kitchen paper to drain.
  • Add the shallot and garlic to the pan and cook for 2 minutes
  • until soft. Add the sprouts and cook for 3-4 minutes
  • until wilted
  • stirring occasionally.
  • Return the bacon to the pan
  • add the almonds and cook through for 2 minutes. Serve immediately.
