GNOCCHI WITH TOMATO AND BASIL
Ingredients
- 1 tbsp olive oil
- ½ onion
- chopped
- 1 garlic
- clove
- ½ tsp red wine vinegar
- ½ tsp caster sugar
- 150ml/4½fl oz passata
- small bunch basil
- chopped
- 125g/4oz ready-made gnocchi
- cooked according to packet instructions
- salt and freshly ground black pepper
Directions
- Heat the oil in a frying pan over a medium heat. Add the onion and garlic and fry until softened.
- Add the vinegar and sugar and stir until the sugar has dissolved.
- Add the passata
- bring to the boil
- then reduce the heat to simmer for 5-6 minutes.
- Add the basil and season
- to taste
- with salt and freshly ground black pepper.
- Add the gnocchi and stir well to coat.
- To serve
- place the gnocchi and sauce into a bowl and serve immediately.
