GNOCCHI WITH TOMATO AND BASIL
GNOCCHI WITH TOMATO AND BASIL

Ingredients
  • 1 tbsp olive oil
  • ½ onion
  • chopped
  • 1 garlic
  • clove
  • ½ tsp red wine vinegar
  • ½ tsp caster sugar
  • 150ml/4½fl oz passata
  • small bunch basil
  • chopped
  • 125g/4oz ready-made gnocchi
  • cooked according to packet instructions
  • salt and freshly ground black pepper
Directions
  • Heat the oil in a frying pan over a medium heat. Add the onion and garlic and fry until softened.
  • Add the vinegar and sugar and stir until the sugar has dissolved.
  • Add the passata
  • bring to the boil
  • then reduce the heat to simmer for 5-6 minutes.
  • Add the basil and season
  • to taste
  • with salt and freshly ground black pepper.
  • Add the gnocchi and stir well to coat.
  • To serve
  • place the gnocchi and sauce into a bowl and serve immediately.
