HONEY-ROASTED FIG AND RED ONION CROSTINI
HONEY-ROASTED FIG AND RED ONION CROSTINI

Ingredients
  • 1 tbsp olive oil
  • ¼ red onion
  • finely sliced
  • 1 garlic clove
  • chopped
  • 1 tsp soft brown sugar
  • 2 tsp balsamic vinegar
  • 1 fig
  • halved
  • 1 tbsp clear honey
  • 2 slices baguette
  • toasted
Directions
  • Preheat the oven to 200C/400F/Gas 6.
  • Heat the olive oil in a pan
  • add the red onion and fry over a gentle heat for five minutes until softened.
  • Add the garlic and sugar and cook for 1-2 minutes. Add the balsamic vinegar and cook for three minutes.
  • Place the halved fig onto a baking sheet and drizzle with honey. Roast for five minutes in the oven.
  • To serve
  • spread the caramelised onions onto the toasted baguette slices and top with the honey-roasted figs.
