MACKEREL ROLLS WITH ROCKET PESTO
MACKEREL ROLLS WITH ROCKET PESTO

Ingredients
  • 1 mackerel fillet
  • cut in half
  • salt and freshly ground black pepper
  • 1 tbsp olive oil
  • 1 slice ciabatta
  • griddled
  • 1 bunch rocket
  • 2 tsp sesame seeds
  • 1 tbsp olive oil
  • 2 tsp red wine vinegar
  • salt and freshly ground black pepper
Directions
  • Roll up each piece of mackerel and secure with a cocktail stick.
  • Heat the olive oil in a small frying pan over a medium heat. Add the mackerel and fry for two minutes on each side
  • then remove from the pan and put onto a slice of griddled ciabatta.
  • To make the rocket pesto
  • place all the ingredients into a food processor and blend until smooth.
  • To serve
  • pour the rocket pesto over the mackerel rolls.
