PEACH MOUSSE
Ingredients
- ½ peach
- peeled and finely chopped
- ½ orange
- juice only
- 150ml/5fl oz double cream
- whipped until stiff peaks form when the whisk is removed
- ½ tsp cinnamon powder
- 1 tbsp icing sugar
- 1 tsp cocoa powder
- 1 tbsp Greek yoghurt
- 1 sprig fresh mint
Directions
- For the mousse
- place the peach and orange juice into a food processor and blend until smooth.
- In a large bowl mix together the cream
- cinnamon and icing sugar
- then fold in the peach mixture. Place this mixture into a tall glass.
- To serve
- dust with cocoa powder
- top with Greek yoghurt and garnish with a sprig of mint.
