PEACH MOUSSE
PEACH MOUSSE

Ingredients
  • ½ peach
  • peeled and finely chopped
  • ½ orange
  • juice only
  • 150ml/5fl oz double cream
  • whipped until stiff peaks form when the whisk is removed
  • ½ tsp cinnamon powder
  • 1 tbsp icing sugar
  • 1 tsp cocoa powder
  • 1 tbsp Greek yoghurt
  • 1 sprig fresh mint
Directions
  • For the mousse
  • place the peach and orange juice into a food processor and blend until smooth.
  • In a large bowl mix together the cream
  • cinnamon and icing sugar
  • then fold in the peach mixture. Place this mixture into a tall glass.
  • To serve
  • dust with cocoa powder
  • top with Greek yoghurt and garnish with a sprig of mint.
