Ingredients
  • ½ peach
  • peeled and finely chopped
  • ½ orange
  • juice only
  • 2 free-range egg whites
  • 2 tbsp caster sugar
  • 1 tbsp icing sugar
Directions
  • Preheat the oven 200C/400F/Gas 6.
  • Place the peach and orange juice into a food processor and blend until smooth.
  • In a large bowl whisk the egg whites until stiff peaks form when the whisk is removed. Add the caster sugar and whisk again.
  • Fold the peach mixture into the egg white mixture and spoon into a ramekin.
  • Transfer to the oven and bake for 7-8 minutes
  • or until risen.
  • Serve on a plate with a dusting of icing sugar.
