PEACH SOUFFLé
Ingredients
- ½ peach
- peeled and finely chopped
- ½ orange
- juice only
- 2 free-range egg whites
- 2 tbsp caster sugar
- 1 tbsp icing sugar
Directions
- Preheat the oven 200C/400F/Gas 6.
- Place the peach and orange juice into a food processor and blend until smooth.
- In a large bowl whisk the egg whites until stiff peaks form when the whisk is removed. Add the caster sugar and whisk again.
- Fold the peach mixture into the egg white mixture and spoon into a ramekin.
- Transfer to the oven and bake for 7-8 minutes
- or until risen.
- Serve on a plate with a dusting of icing sugar.
