PENNE ARRABIATA WITH AVOCADO AND ROCKET SALAD
Ingredients
- 125g/4½oz penne pasta
- cooked according to packet instructions
- 1 tbsp olive oil
- 1 garlic clove
- finely chopped
- ¼ red onion
- finely chopped
- ½ tsp dried chilli flakes
- 1 tbsp tomato purée
- ½ avocado
- stone removed
- sliced
- small handful rocket leaves
- 1 tbsp olive oil
- ½ tbsp balsamic vinegar
Directions
- Place all the ingredients for the pasta into a serving bowl
- mixing well to combine the ingredients.
- For the salad
- place all the ingredients on a separate bowl
- mixing together well. Serve alongside the bowl of pasta.
