PESTO PASTA WITH FETA AND PINE NUTS
Ingredients
- 100g/3½oz flour
- 1 free-range egg
- 1 tsp olive oil
- handful fresh basil
- 1 tsp pine nuts
- 1 clove garlic
- crushed
- 100ml/3½fl oz olive oil
- 50g/1 ¾oz feta cheese
- crumbled
- to serve
- 1 tbsp pine nuts
- to serve
Directions
- For the pasta
- mix the flour
- egg and oil in a food processor to make a firm dough.
- Roll out in a pasta machine
- gradually reducing the roller thickness until it reaches the thinnest setting.
- Then roll through the spaghetti attachment to make a handful of fresh spaghetti.
- Poach in a pan full of boiling salted water for two minutes or until tender.
- To make the pesto
- using a small food processor
- blend the basil
- pine nuts
- garlic and olive oil.
- Stir through the cooked pasta and serve with the crumbled feta cheese and pine nuts.
