SPINACH, FETA AND PINE NUT SALAD

Ingredients
  • 450g/1lb baby spinach
  • 450g/1lb feta cheese
  • cut into chunks or cubed
  • 8 tsp pine nuts
  • lightly toasted
  • 1 red onion
  • sliced finely
  • sherry vinegar
  • to taste
  • light and fruity olive oil
  • to drizzle
Directions
  • Place the washed spinach with the feta
  • onion and pine nuts in a bowl.
  • Sprinkle with sherry vinegar
  • then drizzle with the oil
  • which allows the dressing to coat all the ingredients.
  • Serve alongside grilled lamb
  • chicken or just with some crusty bread.
