SPINACH, FETA AND PINE NUT SALAD
Ingredients
- 450g/1lb baby spinach
- 450g/1lb feta cheese
- cut into chunks or cubed
- 8 tsp pine nuts
- lightly toasted
- 1 red onion
- sliced finely
- sherry vinegar
- to taste
- light and fruity olive oil
- to drizzle
Directions
- Place the washed spinach with the feta
- onion and pine nuts in a bowl.
- Sprinkle with sherry vinegar
- then drizzle with the oil
- which allows the dressing to coat all the ingredients.
- Serve alongside grilled lamb
- chicken or just with some crusty bread.
