PORK SKEWER WITH CHARGRILLED BUTTERNUT SQUASH
PORK SKEWER WITH CHARGRILLED BUTTERNUT SQUASH

Ingredients
  • 200g/7oz pork tenderloin
  • cubed
  • 1 yellow pepper
  • chopped
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp clear honey
  • 2 large slices butternut squash
  • 1 tbsp olive oil
  • 1 tbsp sesame seeds
  • to garnish
Directions
  • For the pork skewer
  • thread the pork and the yellow pepper pieces onto a skewer and drizzle with oil.
  • Heat a griddle pan and place the skewer into the pan. Drizzle with the soy sauce and honey and chargrill for 4-5 minutes on each side
  • or until golden-brown and completely cooked through.
  • For the chargrilled butternut squash
  • heat a griddle pan and place the butternut squash slices into the pan. Brush with oil and cook for 5-6 minutes on each side
  • or until tender and golden-brown.
  • To serve
  • place the butternut squash onto a plate
  • top with the pork skewer and sprinkle over the sesame seeds.
