JAPANESE-STYLE CHILLI PRAWN CANAPéS
Ingredients
- 20 large Mediterranean prawns
- cooked and peeled
- 2 limes
- zest only
- 1 red chilli
- seeds removed
- very finely chopped
- 100g/4oz good-quality mayonnaise
- 2-3 tsp ready-made wasabi paste
- or to taste (available from supermarkets and Japanese stores)
- 2 spring onions
- finely chopped
- 1-2 tbsp Japanese rice wine
- 1 lime
- zest only
- plus juice from ½ the lime
Directions
- For the prawns
- mix the prawns with the lime zest and chilli and set aside
- covered
- to marinate in the fridge for at least one hour.
- Meanwhile
- for the Japanese mayonnaise
- mix all the Japanese mayonnaise ingredients together and transfer the mixture to a serving bowl.
- Arrange the prawns on a plate and serve with the Japanese mayonnaise
- for dipping.
