JAPANESE-STYLE CHILLI PRAWN CANAPéS
JAPANESE-STYLE CHILLI PRAWN CANAPéS

Ingredients
  • 20 large Mediterranean prawns
  • cooked and peeled
  • 2 limes
  • zest only
  • 1 red chilli
  • seeds removed
  • very finely chopped
  • 100g/4oz good-quality mayonnaise
  • 2-3 tsp ready-made wasabi paste
  • or to taste (available from supermarkets and Japanese stores)
  • 2 spring onions
  • finely chopped
  • 1-2 tbsp Japanese rice wine
  • 1 lime
  • zest only
  • plus juice from ½ the lime
Directions
  • For the prawns
  • mix the prawns with the lime zest and chilli and set aside
  • covered
  • to marinate in the fridge for at least one hour.
  • Meanwhile
  • for the Japanese mayonnaise
  • mix all the Japanese mayonnaise ingredients together and transfer the mixture to a serving bowl.
  • Arrange the prawns on a plate and serve with the Japanese mayonnaise
  • for dipping.
