RED CABBAGE SALAD
Ingredients
- 1 tsp olive oil
- ½ red cabbage
- finely sliced
- 1 apple
- peeled and sliced
- ½ tsp ground ginger
- 2 tbsp red wine vinegar
- 1 tbsp brown sugar
- handful fresh parsley
- chopped
Directions
- Heat the oil in a wok. When very hot and smoking add the cabbage and apple. Stir-fry for 4-5 minutes.
- Add the ground ginger
- red wine vinegar and brown sugar and cook for 10 minutes
- stirring regularly.
- Serve in a bowl and top with the chopped parsley.
