RED CABBAGE SALAD

Ingredients
  • 1 tsp olive oil
  • ½ red cabbage
  • finely sliced
  • 1 apple
  • peeled and sliced
  • ½ tsp ground ginger
  • 2 tbsp red wine vinegar
  • 1 tbsp brown sugar
  • handful fresh parsley
  • chopped
Directions
  • Heat the oil in a wok. When very hot and smoking add the cabbage and apple. Stir-fry for 4-5 minutes.
  • Add the ground ginger
  • red wine vinegar and brown sugar and cook for 10 minutes
  • stirring regularly.
  • Serve in a bowl and top with the chopped parsley.
