ROASTED FIGS WITH BALSAMIC VINEGAR
ROASTED FIGS WITH BALSAMIC VINEGAR

Ingredients
  • 1 tbsp balsamic vinegar
  • 1 tbsp brown sugar
  • 2 fresh figs
  • cut into four quarters
  • 2 pieces ciabatta bread
  • toasted
  • 2 tbsp Greek yoghurt
  • 1 tbsp clear honey
  • ½ tsp fresh thyme leaves
Directions
  • Place the vinegar and sugar in a small saucepan and cook at a medium heat until the sugar has dissolved.
  • Add the fig pieces and cook until they are soft and caramelised.
  • Place the griddled ciabatta bread on a plate and place the figs on top.
  • To serve
  • drizzle the yoghurt and the honey on top and scatter over the thyme leaves.
