SAUSAGE PATTIES
SAUSAGE PATTIES

Ingredients
  • 3 sausages
  • 1 lime
  • juice only
  • 1 handful fresh coriander
  • chopped
  • 50g/1¾oz
  • plain flour
  • to dust
  • ½ onion
  • finely chopped
  • 2 figs
  • sliced
  • 50g/1¾oz brown sugar
  • 25ml/1 fl oz white wine vinegar
Directions
  • Mix the sausage meat
  • the lime juice and chopped coriander in a bowl.
  • Mould into three patties and dust in the flour.
  • Fry in a frying pan for 6-8 minutes or until cooked through.
  • For the jam
  • in a pan add the onions with the figs
  • brown sugar and the white wine vinegar.
  • Cook for eight minutes on a low heat until soft and syrupy.
  • To serve
  • place the patties on a plate with the fig jam on the side.
